I think i have mentioned my cinnamon addiction before.
Well, it's been a while since i have whipped up anything cinnamon-ey, so i decided to give myself a treat today.
Whole Wheat Cinnamon Pancakes!
Light and fluffy!
Really, though. this was my one criteria while looking for a recipe. The pancake had to be fluffy. And unfluffy pancake is a crime.
And this baby was like a cloud.
i actually had to refrain from poking it too much because it kept springing back.
While it was on the skillet i was watching in amazement as it turned from gooey-mush-mix to heavenly-feathery-fluffy-cinnamoney-pancake goodness.
I adapted the recipe from here.
Whole Wheat Cinnamon Pancakes
2 cups whole wheat flour
2 tablespoons sugar
1 tablespoon and 1 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1 cup low fat yogurt
1 1/6 cup milk
4 tablespoon canola oil (plus more for the griddle)
2 large eggs
In a small bowl, whisk together dry ingredients and set aside.
Whisk together milk, yogurt, oil and eggs. Add dry ingredients and mix until just moistened. Add more milk if batter is too thick.
Brush oil onto preheated skillet or griddle. Use about 1/4 cup batter per pancake.
Cook until pancake surface begins to bubble and a few have burst, about 1 - 2 minutes. Flip and cook 1 - 2 minutes more.
[makes 22 pancakes]
Like a dream.
My Mom ate two and she was starting to cough because she is allergic to baking soda and cinnamon.
You know it's good when someone who is allergic comes back for seconds.

Homemade Pop Tarts
I got this crazy idea from the Brown Eyed Baker.
Okay, so maybe mine don't look as great and flaky and mouth-watering.
But I'm a beginner. Cut me some slack.
I gave this to my Mom to try and she said it was a bit too heavy on the pastry. But while i was rolling it out it was sticky and melting so I guess i should have chucked it in the freezer before shaping it.
Well, Rome wasn't built in a day.
I've always wanted to use that phrase!
So here is the recipe i used:

Apparently you can make ALL kinds of fillings. Like Jam and Nutella (i am dying to try choco-hazelnut)
Will bring this to school and see what people say.
Hopefully i don't poison everyone.
Oh, and we made chocolate chip cookies for teachers' day.
Although i didn't take any pictures and i didn't actually make them MYSELF.

For the cinnamon sugar filling:
½ cup light brown sugar
1½ teaspoon ground cinnamon
4 teaspoons all-purpose flour

1. Prepare the cinnamon sugar filling by whisking the ingredients together.
2. To make the crust, whisk together the flour, sugar, and salt. Using your fingers or a pastry blender, work in the butter until it is the size of peas and the mixture holds together when you squeeze it. Whisk together the egg and milk and add to the dough. Mix together with a fork until everything is evenly moistened. Knead briefly on a floured surface, if necessary, until the dough comes together.
3. Divide the dough in half. (At this point you can wrap each in plastic wrap and refrigerate for up to 2 days.) If you refrigerate the dough, let it come to room temperature for about 15 minutes before rolling out. Roll out one piece of dough to about 1/8-inch thick, in a 9½ by 12½ rectangle. Using a sharp knife, pastry wheel or bench scraper, trim the rectangle to 9×12 inches. Cut the sheet of dough into nine 3×4 rectangles. Using a spatula, transfer the rectangles to a baking sheet that has been lined with parchment paper or a silicone baking mat. Brush the lightly beaten egg on each of the rectangles. Spoon a tablespoon of filling into the center of each rectangle, leaving a ½-inch of space around the edges.
4. Roll out and cut the second piece of dough in the exact same manner as you did the first. One at a time, place a second rectangle of dough on top of the nine assembled ones. Using your fingers, press around the seams of the dough to make sure they are sealed. Press the tines of a fork around the edges of the rectangles. Prick the tops of the rectangles in multiple spots to allow steam to escape.

Apple and Cinnamon Tea Cake
The bad presentation of this cake was probably my fault.
i forgot to use a spatula to even out the cake before i baked it.
huh.
But whatever it lacked in looks, i guess it made up for it taste.
That's what Daisy said anyway.
So it's a tea cake. I guess it's like any old cake but for some reason the recipe book had it under 'Tea cakes'.
So here is the recipe.
Hopefully someone else would try it and get it to look a tad bit better than mine.
-60g unsalted butter
-1/3 cup caster sugar
-1/2 tsp cinnamon
-1 egg, beaten
-1/2 cup apple, diced
-1 1/4 cup self-raising flour
-1/4 cup milk
Preheat oven to 180 degrees C. Grease and line a 20-cm round tin.
Cream butter, sugar and cinnamon together until smooth. Add egg and beat further.
Mix in the flour and milk.
Fold in the apples.
Bake for 30 min and cool for a further 10 min.
Cinnamon Glace icing
-1/2 tsp cinnamon
-87g icing sugar
-Warm water
Mix icing sugar and cinnamon together. Pour in warm water and mix until thick and slightly sticky. Pour over cooled cake.
Maybe i should have taken a photo of the SLICE of cake.
