Kit Kat Confetti Cupcakes!

So what do you get when you have cupcake fever and lodsa hundreds and thousands and two packets of kit Kat chunky in your fridge?

A kit kat confetti cupcake!
I made these in darling little souffle cups and then printed out these cupcake wrappers from here!
Doesn't it look GREAT??

The icing is a simple buttercream coloured PINK for my friend's birthday (she's a pink chick, you see)
I'm starting to think Pink is the best icing colour ever.

The verdict? Great!
but the hundreds and thousands kind of lost some of their colour in the oven.
But you still get the pretty coloured dots in you cake.

i would advice you to put about two tablespoons of these little jimmies.
What am i doing?
here is the recipe:

Kit Kat Confetti Cupcakes:
225g unsalted butter, soft
225g sugar
225g self-raising flour
1 tsp baking powder
4 eggs
1 tsp vanilla essence
2 tbsp hundreds ad thousands
2 Kit Kat Chunky bars, cut into 12 equal pieces

Cream butter and sugar together till pale yellow. Add eggs one at a time, beating well after each addition. Combine all the dry ingredients and add it to the beaten butter mixture together with the vanilla essence. Whisk with an electric mixer until smooth, about 3 mins. Add the hundreds and thousands and mix until well distributed.

Preheat oven to 175 degrees C and line a cupcake tray with 12 cupcake liners. Drop a tablespoon of batter onto each cupcake liner and then place a Kit Kat piece on top. Cover the Kit Kat piece with the remanding batter.

Bake in preheated oven for about 15 minutes. Cool for 5 minutes in tin before removing to place on a wire rack.

Buttercream
225g unsalted butter, soft
375g icing sugar
pinch of salt
1 tsp of flavouring (optional)
Dash of colouring (optional)

cream butter until it is soft and very pale in colour. while whisking, add the sifted icing sugar a spoonful at a time. Make sure the icing sugar is well combined. Lastly add flavouring and colouring (optional)

This was the excess batter so it didn't really have many hundreds and thousands inside.
i also didn't make much of an effort to dress it up. i was just dying to see what it looked like on the inside.
