Wholewheat Cinnamon Pancakes

I think i have mentioned my cinnamon addiction before.
Well, it's been a while since i have whipped up anything cinnamon-ey, so i decided to give myself a treat today.

Light and fluffy!
Really, though. this was my one criteria while looking for a recipe. The pancake had to be fluffy. And unfluffy pancake is a crime.

And this baby was like a cloud.
i actually had to refrain from poking it too much because it kept springing back.
While it was on the skillet i was watching in amazement as it turned from gooey-mush-mix to heavenly-feathery-fluffy-cinnamoney-pancake goodness.

I adapted the recipe from here.

Whole Wheat Cinnamon Pancakes

2 cups whole wheat flour
2 tablespoons sugar
1 tablespoon and 1 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1 cup low fat yogurt
1 1/6 cup milk
4 tablespoon canola oil (plus more for the griddle)
2 large eggs

In a small bowl, whisk together dry ingredients and set aside.
Whisk together milk, yogurt, oil and eggs. Add dry ingredients and mix until just moistened. Add more milk if batter is too thick.
Brush oil onto preheated skillet or griddle. Use about 1/4 cup batter per pancake.
Cook until pancake surface begins to bubble and a few have burst, about 1 - 2 minutes. Flip and cook 1 - 2 minutes more.
[makes 22 pancakes]

Like a dream.
My Mom ate two and she was starting to cough because she is allergic to baking soda and cinnamon.

You know it's good when someone who is allergic comes back for seconds.
